The French Cultural Cuisine of Foie Gras

Foie gras is comprised of only male ducks, as such, any remaining female birds kept are usually killed and processed into cat food. Foie gras means “fatty liver” in French and refers to ducks or geese which are force fed multiple pounds of grain in an attempt to cause a swelling of the liver
